Spicy Sponge Cake
- 4 eggs
- 2 tablespoons Cornflour
- ¾ cup castor sugar
- ¼ cup arrowroot
- 1 teaspoon mixed spice:
e.g. nutmeg, cloves, cinnamon, coriander, pimento, ginger, and cloves
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon of vanilla essence
- ½ teaspoon Bicarb soda
- ½ teaspoon cream of tartar
- 1 tablespoon of golden syrup or gluten free “glucose” syrup
- Tiny spoon of omega 3 enriched margarine

- A good wholesome simple food.
- The Paill Spectrum model does not preclude using icing sugar to help the taste of the recipe.
- Protein content good courtesy of the eggs.
- Short of the fragile B group vitamins, but not much to start with in terms of B vitamins in the ingredients list.
