Strawberry Cheesecake
- 1 packet of sweet gluten free rice
cookies
- 1 teaspoon cinnamon
- ¼ teaspoon ground ginger
- 90g of omega 3 enriched margarine
Blend all ingredients in a food processor
Press into a margarine smeared cake tin, allow to set in the fridge
Topping
- 2 tablespoons of fruit liquor or ¼ teaspoon Amoretto essence or ¼ teaspoon rosewater essence
- 150 ml of cream
- 150 g of sweetened condensed milk
- ½ cup of lemon juice
- 500 g punnet of strawberries
Combine the topping ingredients in a food processor
Pour onto the biscuit base and chill in fridge until set.
