Shortbread Biscuits

Preheat oven to 200 degrees Celsius
Lightly grease a flat biscuit tray with a thin layer of margarine

Combine margarine and sugar
Beat until the mixture is smooth and creamy
Gradually mix in eggs
Gradually mix in flours
Roll into a log, wrap in baking paper and chill for about 1 hour in cold part of fridge.
Slice into biscuit dough buttons, place on biscuit tray
Cook about 20 minutes at 180 degrees Celsius.

 Instead of slicing use shaped cutters for effect

Medical Comment on this Recipe:

  • Eggs give a good protein content.
  • Wheat flour actually has a very high protein content but unless the flour is combined with other protein grains, the amino acid composition is too out of whack to let your body really extract many amino acids to help protein building.
  • Wheat flour replacements typically are carbohydrate foods, so a little extra care is important to make sure protein intake is adequate, especially if a vegan diet (no meat) is followed.
