- ½ Kg of mixed Fruit
- 200 g of unsweetened crushed pineapple
- 1 tablespoon Amaretto Liquor
- 1 tablespoon Cointreau
- 1 teaspoon rose water essence
- 60 g of omega 3 enriched margarine
- ½ tablespoon nutmeg
- 1 teaspoon mixed spice
- ¼ teaspoon Cinnamon
- 2 beaten eggs
- 60 G of almond meal or hazelnut meal
- 1 teaspoon of xanthan gum or guar gum
- ½ teaspoon cream of tartar
- ½ teaspoon of Bicarb of Soda
- 1 cup of gluten free flour or (1/2 soy flour, ¼ rice flour ¼ potato flour)
- Combine the fruit (pineapple and mixed) & Liquor mixtures & rosewater essence
- Add the Margarine and spices, and then mix well
- Cook on high for 5 minutes in a microwave in a microwave safe, oven safe baking dish
- Stir in the remainder of the ingredients
- Cook on high for 15 minutes in the microwave: until a skewer comes out of he cake clean
- Allowing the cake to stand allows the flavours to meld over several days.
Medical Comment on this Recipe:
- Fat present in the margarine and nut meal.
- Probably a moderate sodium intake courtesy of the baking powder substitute.
- GI rating probably good. The dried fruit and the cooking process tends to remove fragile B group vitamins such as folic acid.
- Overall a reasonable meal or snack, but see if you can reduce the margarine, even if it is omega-3 fatty acid enriched.
